The manual says each game variation requires visiting a specific number of houses (easy = 5, medium = 15, hard = 25), but theres also an extra final house (denoted by flashing colors) where you must steal a turkey dinner.
Cool mode: Complete the easy variation in less than 2 minutes to unlock it, and then press SELECT to select it. It requires visiting 10 houses plus the bonus house. Completing it under 2 minutes is a great time.
Snow mode: Complete the medium variation in less than 4 minutes to unlock it, and then press SELECT to select it. It requires visiting 20 houses plus the bonus house. Completing it under 5 minutes is a great time.
Grinch mode: Complete the hard variation in less than 7 minutes to unlock it, and then press SELECT to select it. It requires visiting 30 houses plus the bonus house. Completing it under 8 minutes is a great time.
BUG: If the dog hits the chimney before you do, the game will revert back to the sleigh screen as though you had touched it. {Chris Derrig}
